Hi! It’s been awhile. I have alot (alot) going on behind the scenes and that coupled with all the sadness and disaster in the world has left me with little inspiration to write. But this week a friend told me she missed my Substack and I realized I missed it too! So here I am dipping a toe back in.
January has been so so cold and has felt so very long. I think today is January 425th? I have been cozying up at home as much as I can and looking for little glimmers to help get me through this long dark freeze. Here are five great things I am loving right now.
To Eat
During the week I don’t have much time to cook. Doug and I eat Sakara for dinner (we have for years and years) and I make simple meals for the girls. With our busy schedules on weeknights there are four dinner times in our house! Sad but true. But on the weekends I like to make at least one family dinner for all of us. Recently this Gnocchi with Sausage and Broccoli Rabe has been on heavy rotation. I swap the sausage for Beyond Sausage and use vegan parmesan to make the whole dish plant based. All four of us love it!
